A nutritious green leaf vegetable of Mediterranean origin, rocket is a low calorie, flavoursome vegetable. It has a strong, peppery, mustard-like flavour and has been used in salads for centuries. It is usually eaten raw in salads, wraps or sandwiches, but is also delicious cooked. Rocket is a popular salad base that pairs well with most foods and an ingredient used in modern Italian food, such as with pasta, red and white meat dishes, and also as a pizza topping.

The best rocket to purchase is bright green in colour and fresh-looking with a fresh smell. When storing the rocket in your fridge, make sure you either wrap it in paper towel and store in a plastic bag, or keep it in a paper bag.

A favourite salad for spring is a rocket, pear and parmesan cheese salad. Slice one pear thinly and place in a bowl with three cups of rocket. Add ½ cup of shaved parmesan. Mix 2 tbsp olive oil, 2 tbsp fresh lemon juice, 2 tbsp balsamic vinegar and 1 tbsp Dijon mustard, then pour over the salad.
